For the many who are currently funemployed, working from home, or even missing their weekly dose of eating out, the golden opportunity has arrived! The Executive Chef, Idin Asmitha, at Anantara Eastern Mangroves Abu Dhabi Hotel has unveiled a nutrient-rich recipe: The Ginger Seabass.
The fish is cooked in an aromatic mocktail of ginger, lime juice, coriander, lemongrass and green chilly.
The recipe is rich in vitamins and minerals ranging from Vitamin C, K & D to Omega-3 and Iron that are key factors to fighting inflammation in the body, boosting immunity system, controlling cholesterol levels, improving digestion and much more.

Ginger Sea Bass
Ingredients
Sea bass 110 g, Fresh ginger 30 g, Green chilli 10 g, Garlic 10 g, Lime leaf 5 g, Coriander 5 g, Lemongrass 10 g, Lime juice 10 ml, Fish sauce 20 ml, Oyster sauce 20 ml, Brown sugar 10g, Water 500 ml.
Method
Marinate the fish with salt and pepper. Place the ginger slices and lime leaves in a bowl. Add chopped garlic, chopped green chilli, oyster sauce, fish sauce, lime juice, brown sugar, chopped lemongrass, and water. Mix well. Pour the mixture onto the marinated fish. Use a sauté pan to cook, cover and steam the fish for 10 minutes or until the fish is cooked through. Plate the fish topped with the sauce and garnish with finely chopped coriander and lemongrass.
