Elegantly crafted by Fouquet’s UAE Culinary Director Balveer Balkisoon and his acclaimed team, the new seasonal menu effortlessly combines Fouquet’s beloved classics, with an array of inventive new dishes.

Light, fresh and bursting with vibrant flavours that are perfect for the season, guests are encouraged to begin their culinary exploration with new starters that strike a masterful balance between healthy and delicious. Presenting crisp baby spinach with creamy avocado, sharp Parmesan, and the delightful crunch of miso crumble, smooth and rich butternut velouté with a sprinkle of hazelnut crumble, and luxurious escalope de foie gras de canard poêlée, which marries the silkiness of pan-seared foie gras with the sweet earthiness of vénitienne beetroot and tangy bigarade sauce, every distinguished diner is left spoilt for choice.

The feast then continues with choices like crispy panko-breaded chicken breast served alongside a rocca salad dotted with cherry tomatoes, and delicate pan-fried sea bass accompanied by a lush shrimp and mussel veloute with pilaf rice. Or, for a further enticing taste of the sea’s bounty, seafood fanatics are welcome to opt for the French Brittany lobster served with a beautifully contrasting combination of parsnip, pear, and parmesan cream, or the gently poached cod fish fillet, featuring light fresh fish complemented by steamed vegetables and a smooth aioli.
