Flagship Restaurant Of 99 Sushi Concept Wins Michelin Star

Bambú Group, owner of the renowned 99 Sushi Bar restaurants around the world, wins the most coveted honor in the hospitality industry – a star granted by the Michelin Guide.

99 KŌ Sushi Bar, the group’s flagship restaurant in Madrid, was recently awarded a Michelin star in the 2020 edition in appreciation of its two sampling menus based on hot food and traditional sushi, respecting Japanese flavors and techniques.

The Japanese haute cuisine restaurant is run by the group’s executive chef, David Arauz, who is also the brain behind the impressive menu at 99 Sushi Bar & Restaurant in Abu Dhabi.

Jaime Castaneda, general manager of 99 Sushi Bar Ltd, said: “There is no doubt that winning a Michelin star for one of our restaurants is a dream come true. David is a culinary genius, and ever since he joined our team at helm of cold cuisine in 2010, we knew this moment was coming.

Every 99 Sushi Bar menu is the result of constant work, always in search of excellence. David is never afraid to explore new concepts and surprising ingredients in his dishes and he has proven this with the success of the Japanese haute cuisine served at our venues around the globe.”

David has created two unique culinary experiences for all 99 Sushi guests. The Omakase and Kaiseki menus respect the freshness and flavor of high-quality ingredients, are prepared with traditional Japanese cooking techniques and then plated in modern presentation styles.

“We are thrilled to give UAE residents and tourists the chance to experience the Michelin-approved dishes at 99 Sushi Bar & Restaurant in Abu Dhabi. Very soon, we will open our newest restaurant in Dubai, which will also feature David’s creative dishes on the menu,” Jaime said.

Floor-to-ceiling windows at 99 Sushi Bar & Restaurant provide a striking panoramic view of the Arabian Gulf, while the stunning interior sets the mood for some subtly complex modern Japanese cooking. For a more intimate setting, the venue also boasts a private dining room and a cosy terrace that often need to be reserved in advance.
