Opening its doors on 31st December 2019, La Salle, an intimate 42-seat restaurant is set to be one of Abu Dhabi’s most exciting launches. Located by the shores of Saadiyat Island and inspired by its cultural district, La Salle accentuates a multi-sensory showcase of Provençal cuisine. An exclusive destination that combines a unique blend of art, striking interiors and shimmering views of Saadiyat Beach – known to be the most beautiful coastline in the UAE. The opening will be celebrated on New Years’ Eve, as guests will be able to book a table to enjoy an exquisite 11-course tasting menu and spectacular fireworks display.
The venue and decor alone set the tone for an unforgettable dining experience. Meaning ‘the room’ in French, fine dining venue La Salle, takes inspiration from the artistic hub surrounding it. With its luxurious yet stripped back interior, the elegant room itself is a piece of art. The combination of old and new, works harmoniously together. Distressed vertical pillars and wood slats are accentuated by a stunning Carrara marble bar, and the antique wall-filling mirrors reflect the stunning panoramic views from outside.
The floor-to-ceiling windows allow the afternoon light to flood the room, creating a magical golden hue. When the sun sets and darkness takes over, the room transforms, creating a dramatic, intimate space. The focal point of the room is the striking vintage chandelier, centrally hung over a hand-carved, eight-seater master-chef wooden table, which comes to life at night and plays a pivotal role in the spacious room.
The menu is a theatrical voyage through Provençe and its coastal cities, passionately headed by Chef Sergio Cabrera and his acclaimed and highly experienced international Front of House – with team members originating from Europe, America and South Africa. The Argentinian born chef has had stints at Michelin-star restaurants around the world and has been requested on numerous occasions to cook for royalty and famous international guests.
Chef Sergio Cabrera has ensured that only the best produce is in his kitchen, from the Arbequina olive oil to the extremely fine 100-Year-Old Balsamic Vinegar and unique Alba White truffles, the authenticity of La Salle’s specially sourced ingredients is showcased in the finished dishes. The menu showcases the very best of Provençal cuisine, full of vibrant colours and rich textures. Signature dishes include a dish that originates from Nice La Pissaladière Niçoise (caramelized onions, black anchovies & olives), La Bouillabaisse de Marseille (seafood broth, monk fish, blue mussel cuttlefish, rock shrimps, garlic crouton, piquillo aioli), 30 day dry aged Wagyu Côte de Boeuf to be shared between two (wild mushrooms, béarnaise sauce, truffle mash), Black Cod (Lyonnaise potatoes, caponata & beurre blanc sauce), Crêpes Suzette (flambéed with Grand Marnier, orange butter, served with cottage cheese ice cream & Bordeaux soaked pears), La Fraise (Champagne marinated strawberries, sherry jelly & lemon sorbet).
La Salle’s elegant bar – which is affectionately known as “Le Bar” – is a must for oenophiles and cocktail enthusiasts. The beverage list is an extensive curated showcase of premium drinks – a mix of old and new world and an exclusive list of Grand Crus. Cocktails will be a performance in themselves, with the skilled bar team creating an array of inspired drinks using molecular mixology. Signature serves include the Hermetic Desire (lemongrass pearls made in house by the bar team), Black Fox Martini (created with activated charcoal powder), Nutteer (infusing whiskey and cigar leaves), Simply Sensual (inspired by Joe Shields and his dedication to The Chivas Regal Brand) and Smoked Herb Garden (a Middle Eastern born invention).
